Pizza On The Grill

Pizza on the Grill

Who doesn’t love pizza?  This grilled pizza is light, fun and delicious.   You can be as creative as you want with a variety of toppings.  Here are a few of my favorites!

1 whole wheat pizza dough

1 tablespoon olive oil

1 tablespoon corn meal

Place pizza dough in a medium size bowl, rub with olive oil, cover and let rest for 20-30 minutes at room temperature.  Mean while prep toppings.

Toppings:

Caramelized Onion & Goat Cheese Pizza

1 large sweet onion sliced

2 garlic cloves sliced thin

2/3 cup crumbled goat cheese

¼ cup each freshly chopped oregano & thyme or 2 tablespoons dried

1 tablespoon fennel seeds

1 tablespoon olive oil

In a medium size skillet heat the olive oil on medium heat.  Add the onion slices and fennel seeds.  Sautee for about 10 -15 minute until they start to caramelize.  Add the garlic slices and herbs, cook for another 5-10 minutes.  Remove from heat.

Sun Dried Tomato & Kalamata Olive Pizza

1 cup chopped sun dried tomatoes

½ cup chopped kalamata olives

¼ cup freshly chopped oregano or 2 tablespoons of dried oregano

1 cup of Romano cheese grated

Sprinkle corn meal on a large cutting board or pastry board, roll out pizza dough to get a thin circle about 10-12” in diameter.  Place dough at high heat on the barbecue, cook for about 3-5 minutes careful not to burn.  Turn dough over and start layering your toppings. Cook for 10 – 15 minutes again watching not to burn.  Take off grill, slice and enjoy!!!
